Craft Brewing beer systerm

Principle: Beer fermentation is the use of beer yeast to carry out a series of `biochemical metabolism'of some components in wort, to produce alcohol and various flavor substances, and to form a distinct flavor of brewing wine.


 

Description:

1) Familiar with the main characteristics of brewing equipment;

 

(2) Familiar with beer brewing technology and operation of beer brewing equipment;

 

(3) Comprehend the changes of fermentation broth through experiments, such as yeast cell concentration, yeast bud growth rate, etc.

 

(4) Exercise students'ability to analyze and solve problems in production.

 

   

3.2 Process Equipment and Configuration

The main equipment of the beer production system is as follows:


(1) Saccharification system: including malt grinder, saccharifying pot and wort pump.

(2) Fermentation system: fermentation tank, yeast additive.

(3) Washing system: including hot water tank, hot water pipeline and spraying device.

(4) Heat exchange system: section heat exchanger.

(5) Refrigeration system: including ice water tank, ice water refrigeration unit and ice water pump.


4.Operation step

4.1 Malt comminution:

Equipment Inspection-- Raw Material Inspection-- Add malt to hopper and start crushing-- When crushing, operators should wear dust-proof equipment. --Post-treatment

4.2 Wort Saccharification

 equipment inspection -- equipment disinfection-- preparation of feeding water--feeding (protein decomposition)-- preparation of mashed water -- (starch saccharification) -- cleaning saccharifying pot --static -- measurement of the original wort concentration

4.3 mixed concentration determination 

4.4 Wort Boiling

Heating --wort, boiling -- adding hops

4.5 wort, rotary sedimentation

4.6 pipeline sterilization

4.7 Wort Cooling

 Check -- Cooling -- Row Residual Wash -- Oxygenation-- Recovery

4.8 Fermentation System

inspection of -- washing -- inoculation -- oxygenation -- elimination of impurities -- sugar -- before fermentation -- tank (reduction) -- after fermentation (liquor storage) -- yeast treatment--Fermentation Tank

 

Fermentation Tank

A. Temperature: Set various temperature parameters according to process requirements.

 

B. Pressure: Put the pressure regulating valve to the specified pressure in time according to the process requirements。
